Easy Ground Beef Stroganoff Noodle Recipe
Ingredients
- 1 tablespoon unsalted butter
- 1 tablespoon vegetable oil
- 1 cup thinly sliced mushrooms
- 1 teaspoon salt, plus more to taste
- ½ cup diced onion
- 1 pound ground beef
- freshly ground black pepper
- 1 pinch of cayenne pepper
- 2 cloves minced garlic
- 1 ⅓ tablespoons flour
- 2 tablespoons vodka (Optional)
- 2 ½ cups beef broth, or as needed
- 1 cup water
- 2 ½ cups egg noodles
- ½ cup sour cream, plus more for serving
- 2 tablespoons fresh sliced chives or green onions
Directions
- In a skillet over medium-high heat, melt the butter and oil. Season the mushrooms with salt and cook, stirring periodically, until golden brown, 5 to 10 minutes. Mix in the onion and ground meat. Cook, stirring occasionally, until the beef is browned and crumbly and the onions are tender and transparent about 5 minutes. Season with black pepper and cayenne pepper to taste.
- Cook for 1 minute after adding the minced garlic and flour. Allow around 30 seconds for the vodka to evaporate. Bring to a simmer with the beef broth and water. Cook for 10 minutes, stirring periodically.
- Reduce the heat to medium and stir in the noodles. Simmer for 5 minutes with a tight-fitting lid. Uncover and thoroughly stir. Cook until the noodles are barely soft, about 3 minutes. (See also the Cook's Note.)
- Reduce the heat to low and mix in the sour cream once the noodles are done. If preferred, top with additional sour cream and green onions or chives.
